Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 0.5 cup shredded mozzarella cheese low-moisture preferred
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup cream cheese softened to room temperature
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • salt and pepper to taste
  • 4 large low-carb tortillas
  • 1 tbsp olive oil

Method
 

  1. Preheat a large skillet or grill pan over medium heat. Add olive oil and swirl to coat the entire surface.
  2. In a medium bowl, combine shredded chicken, mozzarella, cheddar, softened cream cheese, minced garlic, parsley, salt, and pepper. Mix until fully combined and cohesive.
  3. Divide the mixture into four equal portions. Spoon each portion onto the center of a low-carb tortilla and roll up tightly into a firm wrap.
  4. Place wraps seam side down in the hot skillet. Cook for 2 to 3 minutes per side until golden brown and cheese is fully melted inside.
  5. Remove from skillet and let rest one minute before slicing diagonally. Serve immediately. Garnish with extra fresh parsley if desired.

Notes

Cream cheese must be fully softened before mixing for a smooth lump-free filling. Always cook seam side down first for a proper seal. For spicy version add smoked paprika or chili flakes to the filling. For gluten-free use certified gluten-free low-carb tortillas. Reheat in a dry skillet over medium-low heat to restore crispness. Store filling and tortillas separately for best meal prep results.
