- Preheat a large skillet or grill pan over medium heat. Add olive oil and swirl to coat the entire surface.
- In a medium bowl, combine shredded chicken, mozzarella, cheddar, softened cream cheese, minced garlic, parsley, salt, and pepper. Mix until fully combined and cohesive.
- Divide the mixture into four equal portions. Spoon each portion onto the center of a low-carb tortilla and roll up tightly into a firm wrap.
- Place wraps seam side down in the hot skillet. Cook for 2 to 3 minutes per side until golden brown and cheese is fully melted inside.
- Remove from skillet and let rest one minute before slicing diagonally. Serve immediately. Garnish with extra fresh parsley if desired.
Notes
Cream cheese must be fully softened before mixing for a smooth lump-free filling. Always cook seam side down first for a proper seal. For spicy version add smoked paprika or chili flakes to the filling. For gluten-free use certified gluten-free low-carb tortillas. Reheat in a dry skillet over medium-low heat to restore crispness. Store filling and tortillas separately for best meal prep results.
