Honey Garlic Sheet Pan Sausage

Ingredients
  

  • 14 oz chicken or turkey sausage sliced into 1/2-inch rounds, fully cooked variety recommended
  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • 2 cup broccoli florets cut into 1/2-inch pieces
  • 1 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp apple cider vinegar
  • salt and black pepper to taste
  • 2 tbsp fresh parsley finely minced, added after roasting as garnish

Method
 

  1. Preheat the oven to 400 degrees F. Line a large sheet pan with parchment paper or coat lightly with nonstick spray. Use a pan large enough for everything to sit in a single layer.
  2. Arrange the sliced sausage, diced sweet potatoes, and broccoli florets in an even single layer on the prepared sheet pan. Spread out as much as possible to ensure roasting rather than steaming.
  3. In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant but not browned.
  4. Stir in the honey, soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2 to 3 minutes, stirring occasionally, until the glaze thickens slightly.
  5. Pour the honey garlic glaze evenly over the sausage and vegetables on the sheet pan. Toss with a spatula or tongs until everything is fully coated.
  6. Roast in the preheated oven for 25 to 30 minutes, stirring everything at the 13 to 15 minute mark, until the sweet potatoes are fork-tender and the sausage is golden brown and caramelized.
  7. Remove from the oven, sprinkle with fresh parsley, and serve warm straight from the pan.

Notes

Use a fully cooked chicken or turkey sausage for best results. Spread all ingredients in a single layer on the pan to roast rather than steam. Low-sodium soy sauce is recommended since the sausage adds salt on its own. Add parsley after roasting only, not before, to keep it bright green. Leftovers keep for up to 4 days refrigerated and reheat well in a skillet with a splash of broth.
