- In a large bowl, combine ground turkey, feta, red onion, red bell pepper, mayonnaise, Dijon mustard, garlic powder, oregano, salt, and pepper. Use a fork or your hands to mix until just combined. Do not overmix.
- Divide the mixture into 4 equal portions and shape each into a patty about 1/2-inch thick. Press a slight indent in the center of each patty with your thumb.
- Stovetop: Heat a grill pan or cast iron skillet over medium heat with 1 tablespoon of oil. Add patties and cook 5 to 6 minutes per side until the internal temperature reaches 165 degrees F.
- Grill: Optional -- freeze formed patties on parchment for 30 minutes before grilling. Heat grill to medium-high, oil grates, and cook 5 to 6 minutes per side until 165 degrees F. Do not flip too early.
- Oven: Preheat to 400 degrees F. Place patties on a parchment-lined rimmed baking sheet and bake 20 minutes, flipping once at the 10-minute mark, until reaching 165 degrees F.
- Air Fryer: Preheat air fryer to 380 degrees F for 5 minutes. Place burgers in a single layer. Cook 6 minutes, flip, then cook 5 to 7 more minutes until the internal temperature reaches 165 degrees F.
- Serve on buns or lettuce wraps with tzatziki sauce, lettuce, sliced tomato, and red onion.
Notes
Do not overwork the meat mixture or patties will become dense. For grilling, the optional 30-minute freezer step helps patties hold together. Always verify doneness with an instant-read thermometer -- ground turkey must reach 165 degrees F. Cooked patties keep in the fridge for up to 4 days or frozen for up to 3 months.
