Chicken Avocado Wrap

Ingredients
  

  • 1 cup cooked chicken breast sliced or shredded; rotisserie chicken works great
  • 1 ripe avocado sliced
  • 2 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp ranch dressing or your favorite dressing
  • salt and pepper to taste

Method
 

  1. Cook and slice or shred the chicken breast. Slice the avocado in half, remove the pit, scoop out the flesh, and slice. Dice the tomatoes and shred the lettuce if needed. Squeeze lime juice over avocado slices to prevent browning.
  2. Place the flour tortillas on a microwave-safe plate and microwave for 10 to 15 seconds to warm them up. This keeps them pliable and prevents tearing when rolled.
  3. Lay the warm tortillas flat on a clean surface. Add a layer of shredded lettuce in the center, leaving about 2 inches of space at the edges.
  4. Layer the chicken on top of the lettuce, then arrange the avocado slices over the chicken. Sprinkle diced tomatoes and shredded cheddar cheese on top.
  5. Season the filling with salt and pepper to taste. Drizzle ranch dressing evenly over the filling.
  6. Fold the sides of the tortilla inward over the filling. Starting from the bottom edge, roll the tortilla tightly upward, tucking in the sides as you go. Place seam-side down and slice diagonally before serving.

Notes

Use rotisserie chicken for the fastest prep. Store assembled wraps tightly wrapped for up to 24 hours. For meal prep, store filling ingredients separately and assemble just before eating.
