- Cook brown rice according to package directions, about 30 minutes. Fluff with a fork when done and cover loosely to keep warm.
- Heat a large skillet over medium heat. Add ground beef and season with salt, pepper, and optional garlic powder and smoked paprika. Break apart as it cooks for 7 to 8 minutes until browned and no longer pink. Drain excess fat and let rest briefly.
- While the beef cooks, halve the cherry tomatoes, shred the lettuce, and slice the pickles.
- Build each bowl with brown rice on the bottom, then layer on ground beef, shredded lettuce, cherry tomatoes, pickles, and shredded cheddar.
- In a small bowl, whisk together ketchup and mustard. Drizzle generously over each bowl and serve immediately.
Notes
For meal prep, store all components separately for up to 3 days. Reheat rice and beef together and add fresh toppings before serving. Swap ground beef for ground turkey or chicken for a lighter version. Cauliflower rice works well as a low-carb base.
