Ingredients
  

  • 1 lb lean ground beef 90/10 recommended for less excess fat
  • 2 cups cooked brown rice Prepared according to package directions
  • 1 cup cherry tomatoes Halved
  • 2 cups shredded romaine or iceberg lettuce
  • 0.5 cup sliced dill pickles
  • 1 cup shredded cheddar cheese
  • 0.25 cup ketchup
  • 2 tbsp yellow mustard
  • 0.5 tsp garlic powder Optional, for the beef
  • 0.5 tsp smoked paprika Optional, for the beef
  • salt and pepper To taste

Method
 

  1. Cook brown rice according to package directions, about 30 minutes. Fluff with a fork when done and cover loosely to keep warm.
  2. Heat a large skillet over medium heat. Add ground beef and season with salt, pepper, and optional garlic powder and smoked paprika. Break apart as it cooks for 7 to 8 minutes until browned and no longer pink. Drain excess fat and let rest briefly.
  3. While the beef cooks, halve the cherry tomatoes, shred the lettuce, and slice the pickles.
  4. Build each bowl with brown rice on the bottom, then layer on ground beef, shredded lettuce, cherry tomatoes, pickles, and shredded cheddar.
  5. In a small bowl, whisk together ketchup and mustard. Drizzle generously over each bowl and serve immediately.

Notes

For meal prep, store all components separately for up to 3 days. Reheat rice and beef together and add fresh toppings before serving. Swap ground beef for ground turkey or chicken for a lighter version. Cauliflower rice works well as a low-carb base.
