Balsamic Baked Chicken Breast with Mozzarella Cheese

Ingredients
  

  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 2 tbsp olive oil divided
  • 0.25 cup balsamic vinegar aged preferred for richer glaze
  • 1 tbsp honey or maple syrup
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella cheese
  • fresh basil or parsley optional garnish

Method
 

  1. Preheat oven to 400 degrees F and lightly grease a baking dish with olive oil. Season both sides of each chicken breast with salt and pepper.
  2. In a small bowl, whisk together the balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic. Set aside.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken breasts for 2 to 3 minutes per side until golden brown.
  4. Transfer seared chicken to the prepared baking dish. Pour the balsamic mixture evenly over each breast. Scatter halved cherry tomatoes around the chicken.
  5. Bake uncovered for 20 to 25 minutes until the chicken is almost cooked through and the tomatoes have softened.
  6. Remove from oven and sprinkle shredded mozzarella over each chicken breast. Return to oven and bake for 5 to 7 minutes until cheese is bubbly and internal temperature reaches 165 degrees F.
  7. Garnish with fresh basil or parsley if desired and serve warm.

Notes

Do not skip the sear -- it adds color and locks in moisture. Use aged balsamic for a richer glaze. Leftovers keep for up to 4 days and reheat best in the oven at 325 degrees F for 10 to 12 minutes.
