This colorful salad is based my mustardy lentil sweet potato salad—a blog fave—but made fresher and greener and more leafy for summer 🌱

Roasted sweet potato cubes, lentils, a mustardy maple tahini dressing, peppery arugula, and juicy cherry tomatoes. Sweet, savory, colorful, loaded with texture and flavor.
